Feijão (Brazilian Black Bean Stew)
Ingredients
- 500g black beans, washed and presoaked for 12 hours
- 6 slices of bacon, chopped in small rectangles
- 1 pack of Private Selection® Naturally Hardwood Smoked Coarse Grind Garlic Sausage (Kroger)
- 1 pack smoked pork neck or any smoked pork meat (smoked pork ribs are great too)
- 4 onions, diced
- 6 garlic cloves, minced
- 2 bay leaves
- Salt and pepper to taste
Directions
- Wash the beans, cover with water and half a lime and soak for 12 hrs. Replace the water twice if possible.
- Sauté the bacon and sausage until golden, then remove from the pan. Leave some grease for the onions.
- Sauté the onions with salt and pepper until lightly golden, then add the garlic and sauté for 1 minute.
- Wash the presoaked beans and add to the pan with onions and garlic, sauté for 2 minutes.
- Add back the meats and the smoked pork neck.
- Add bay leaves and cover with filtered water, with beans submerged 2-3 fingers below waterline.
- Boil, then simmer covered for 3-4 hours until beans and meat are tender. Check and stir every hour, adding water if needed.
- Serve with rice and orange slices.
