Feijão (Brazilian Black Bean Stew)

  1. Wash the beans, cover with water and half a lime and soak for 12 hrs. Replace the water twice if possible.
  2. Sauté the bacon and sausage until golden, then remove from the pan. Leave some grease for the onions.
  3. Sauté the onions with salt and pepper until lightly golden, then add the garlic and sauté for 1 minute.
  4. Wash the presoaked beans and add to the pan with onions and garlic, sauté for 2 minutes.
  5. Add back the meats and the smoked pork neck.
  6. Add bay leaves and cover with filtered water, with beans submerged 2-3 fingers below waterline.
  7. Boil, then simmer covered for 3-4 hours until beans and meat are tender. Check and stir every hour, adding water if needed.
  8. Serve with rice and orange slices.
